Domaine Anne & Sebastien Bidault
With a total of 1 ha 09 ares, Domaine Anne et Sébastien Bidault is tiny producing just about 525- 550 cases of wine each year. Establishing their domaine in 2008, Sébastien is from Puligny-Montreachet while Anne is from Morey-Saint-Denis.
Working with tiny holdings from Lieu Dits in Chambolle Musigny, Gevrey Chambertin, Morey-Saint-Denis & a tiny holding in Grand Cru Clos de la Roche, they are the epitome of a high quality domaine focused on ultimate quality. This means hand harvesting from very old vines (“tres villies vignes”, as they say a la Bourgogne) up to 100 years old with 5-6 passes through the vineyard selecting only the ripest grapes. Farming is done with a mindset of respecting the terroir and operating with no pesticides, herbicides and tilling the soil. The grapes are hand sorted at the winery then destemmed and fermented in stainless steel. After alcoholic fermentation in Stainless, the young wine is transferred to 30-50% new barrique for 12-18 months. These wines are benchmarks from their villages and terroirs, and should be a model for other domains - charge a fair and honest price for the wine and hold that pricing.
